The olive trees grow up on terraces, on the side of the mountains along the valleys that run deep in the inner part of the territory, till an altitude of 700 mt. This particular landscape that surrounds the trees is for sure the main factor which gives the olives such a special quality: the mountain rapidly falls in the sea water and, due to this configuration, the sea breeze can easly reach higher altitudes where the olive trees are.
